Tomato and Peach Gazpacho

Give this cool twist on an old recipe a try from My Tiny Green Kitchen. The peach adds a little hint of a bright and zingy flavor to this traditional veggie based dish. Don’t forget to be picky with the fruits you choose. Nothing beats a super ripe peach and a fresh-off-the-vine tomato. The real flavor starts with the ingredients. πŸ™‚

Ingredients

(for 4-6 people)

  • 2 slices of stale, trimmed bread (Alentejo style bread or sourdough)
  • 1 small red onion
  • 1 garlic clove
  • 4 medium sized tomatoes
  • 2 peaches
  • ΒΌ red pepper
  • 1 peeled cucumber
  • 3 tbsp extra virgin olive oil
  • 1 tbsp white wine vinegar
  • 1 small glass of cold water or ice
  • Sea salt, black pepper, dried oregano

In a bowl arrange the ingredients in the following order: 2 slices of bread, red onion finely sliced, 2 tomatoes sliced, finely sliced garlic, 1 pinch of salt and pepper, 1 small handful of dried oregano, sliced pepper, 1 peach sliced, 1 tomato sliced, cucumber finely sliced, 1 peach sliced, 1 tomato sliced, 1 pinch of salt, olive oil, vinegar and water. While you place the ingredients press them down to help the flavors to combine. Cover and refrigerate for at least 1 hour. Blend in a blender; you might have to do it in more than one batch. Serve with a drizzle of olive oil, fresh coriander and basil.
