The Chic Cook: Chickpeas and tahini got married today!! I mean, they were always in love but today they really solidified their commitment to each other. They became as one!!!
Ha! Ok enough of my cheesy analogy.
When I took a bite out of these cookies I had a moment. I thought they were going to be good, but when they came out of the oven and I took a bite out of this moist and delicious concoction I knew I hit the jackpot. The best part is, they are made from chickpea flour! So basically guilt free right?! My husband and I are always looking for healthy snacks and I cannot wait to feed this cookie to him and see the reaction!! Will keep you posted friends!!
3 tbsp coconut oil
1/2 cup coconut sugar
1 tbsp maple syrup
1 tsp sea salt
1/2 cup tahini
1 cup garbanzo flour
1 egg + 1 egg yellow
1 tsp baking powder
1 tsp vanilla
3/4 cup chocolate chips
Preheat oven to 325 Blend the coconut sugar, maple syrup, oil, and tahini until you get a smooth consistency. Add eggs and vanilla and combine again. Add the salt, flour, baking powder and combine well. Mix in chocolate chips and bake for 15 minutes. Enjoy!
