Despite its neutral color, cauliflower is a wonderful veggie loaded with tons of nutrients. Here’s a fun recipe to try featuring cauliflower that has been chopped finely in a food processor and drained of it’s excess juice to create a dough that is easily made into tortillas. You can test out how this works for you and play with adding extras like quinoa, chickpea flower, flax, chia seeds and spices to the batter and see how you like it best. Serve them family style with an array of fillings to choose from like guacamole, fresh salsa (tomato, pineapple, peach or even blueberry!), shredded veggies, beans, and seasoned Greek yogurt, or if you are a fish eater a lovely mango ceviche.
