Sweet Potato and Beet Zoodles with Kale and Lemon Cream Sauce

Here’s an easy and great for you dish. It’s made of sweet potatoes and beets that have been cut like noodles and is topped with an almond based lemon garlic cream sauce which you can make right in the blender. You can buy them pre-cut at some specialty supermarkets or use a spiralizer, it’s easy once you get the hang of it. I hope you enjoy it, let us know what you think!

Noodles:

1 Cup Beet Noodles

1 Cup Sweet Potato Noodles

1/2 Kale Shredded

Sauce:

1 Cup Almonds (or walnuts)

1 Clove of Garlic

1/2 Squeezed Lemon

1 Tblsp Olive Oil

1/8 Cup Water

S & P to taste

 

img_0037Saute your noodles and kale in a pan for about ten minutes on high with a touch of water until they are soft enough for you to enjoy biting into them. In a blender add all the ingredients for the sauce together and blend for about five minutes. Feel free to adjust how thick or light you would like the sauce to be by altering how much water you add to it. You can always add more nuts if it’s too light or more water. You may also enjoy more lemon or adding any herbs or cheese that you enjoy the flavor of. Scoop the noodles onto your plate and drizzle the sauce on top. Serve with crushed almonds.
