Raw Vegan Cheese Cake with Passion Fruit

Check out this beauty. We love natural, healthy “cheese cake” made with soaked nuts and sweet dates. This one features the sweet zing of passion fruit – the perfect way to brighten your mood on a cold day. Give it a try and let us know what you think. 🙂

Ingredients for filling:

Add all the ingredients for the crust in a food processor and blend until small bits remain and it forms into a ball. Remove and set aside.

For the filling do the same thing – add all the ingredients in a food processor and blend it.

Prepare small cake round with parchment. Add the crust first and then the filling. 20 mins later, or until the cake slightly firms up, add a thin layer of passion fruit along the top. Leave it in the freezer for 3 hours or until completely firmed but not too hard. If you decide to keep the cake for a while, make sure you give it about 10 – 15 mins of thaw time before you serve it so it isn’t too rock hard but still firm and chill. Garnish with berries and flowers. Enjoy!
