This is a super simple one that tastes amazing and adds a hint of tropical relaxation to your life, even if you only get to pretend for 10 minutes that you are on vacation. Coconut water is incredibly good for you and the lime and strawberries provide much-needed vitamin C to help keep your immune system strong.
Feel free to switch out the strawberries for other tropical fruit combos and take a 10 minute vacation from life. You deserve it. ❤
2 containers coconut water
1 tablespoon agave syrup (optional)
Juice of 1½ limes or lemons
Leaves from 3-4 sprigs of fresh mint (optional)
Blend all of the ingredients in a high-speed blender until smooth. If you like, you can pour the mixture through a sieve to get rid of any seeds. Feel free to experiment with using more or less strawberry so it is a light drink or more of a smoothie. You can also play with adding some sparkling water.
Store in the fridge and serve cold with sliced strawberries, a sprig of mint and ice cubes, if you like them. Serve it up in your finest stemware and enjoy.
Tip: Fill and ice cube tray with coconut water and use these in the agua fresca so it’s not watered down as it melts.
