Piña Colada

One of my favorite drinks in the world is the piña colada, I think it’s because I’m such a huge pineapple fan. It’s really important to make it with real ingredients though. When you make it fresh at home it’s a power drink stocked with tons of good-for-you nutrients. If you buy the mix or go out and order a drink at a bar (with alcohol added or not) the flavor will typically be manufactured to taste like pineapple, but really just be a ton of sugar, chemicals, and food coloring. Make your own at home with the real stuff so that you know exactly what you’re putting in your body – I honestly think they taste a million times better when you use the real ingredients anyway.

 

Ingredients

One cup of pineapple chunks

1-2 frozen bananas

2 cups coconut water

1/2 cup nut milk (almond, soy, hazelnut)

1 tablespoon coconut oil

 

Just throw everything together in the blender for a minute, grab your coolest glass, and stick an umbrella in it – couldn’t be easier. 🙂

 

Feel free to adjust the recipe adding more or less of anything you like. You can also turn this into an extra healthy smoothie for breakfast or snack time with a scoop of chia seeds, bee pollen, or a natural protein powder. You can even stick some kale in here if you want; it’ll turn the whole thing green, but it will still taste like heaven. I like using fresh pineapples because I don’t mind chopping the whole thing apart. If the spikes get on your nerves, feel free to use the pre-chopped from the fruit salad section of your grocery store or the canned kind works, just be conscious of what is added to it and try to avoid anything that is preserved in corn syrup or something you can’t pronounce. For the nut milk you can always just add a handful of nuts and some water and it will turn itself into the perfect thing, you just might need to blend it a tiny bit longer.

Prepping out tons of chopped bananas and storing them in the freezer makes it insanely easy to make one of these smoothies in a moments notice, but if you don’t have some stocked up just take a regular banana and add a few ice cubes, that works too. You don’t have to put in the coconut oil, but I find that it really enhances the flavor and texture of the smoothie, and we need some fat in our daily meals in order to absorb the nutrients we eat and keep things working right in our bodies anyway.

      Totally go for the rum if you want! I just love this as a breakfast smoothie, and I also love going long stretches of time without drinking, but a little rum in your cup from time to time can be wonderful. Hope you enjoy it either way! It’s certainly healthier this way than from a sugary mix. ❤
