Healthy Remoulade Sauce

Remoulade is a sauce that is popular in parts of the south in the US-of-A. It can be used in place of mayo or tartar sauce since it is thick, creamy and flavorful. But, surprise surprise, it is actually a healthy food. The process of blending veggies and spices makes things so creamy they seem like a fatty heart-stopper, but it’s actually pretty darn close to a salad when you break it down. I keep learning this lesson with all my veggie soups, too. Just pop it in the blender and it’s suddenly creamy, comforting, and decadent. Amazing.

Try this in a sandwich, with panini pressed potato wedges, or as a sauce on fish and grilled tofu burgers – whatever floats your boat. You can keep a batch in the fridge for a few days and play with what you like eating it with. It great all year round, but because it has so many cold fighters and immunity boosters this might be just what you need to fight the winter blues and stay strong.

Here are the ingredients:

2 – 3 Avocados (splash of olive oil or flax oil is optional)

1/2 cup chopped scallions

1/2 cup chopped onions

1/4 cup fresh lemon juice

1/4 cup chopped celery

3 tablespoons whole-grain mustard

3 tablespoons ketchup

3 tablespoons chopped parsley

2 tablespoons chopped garlic

3 tablespoons prepared horseradish

1 teaspoon salt

1 teaspoon cayenne (or to taste)

1 teaspoon freshly ground black pepper

 

Directions:

Blend it all up and enjoy 🙂
