This simple recipe is the ultimate proof that eating well can in fact be easy, delicious, fun and joy-inducing. If you premake the (healthy) Nutella ahead of time, then this dish is ready in about 10 mins and will fill you up with all the energy and vibrancy you need to start your day right – or finish it on a high note. Here’s what you need to make your own:
2 Frozen Bananas (cubed is easier to blend)
2 Tablespoons of (healthy) Nutella – click for directions on how to make it
1 Ripe papaya
1 Cup of Mixed Fresh Berries (Strawberries, Blueberries, Blackberries)
1 Teaspoon Bee pollen
1 Teaspoon Chia Seeds
1 Tablespoon Coconut Oil (optional)
A sprinkle of sliced almonds, coconut slivers, and a few fresh banana slices.
Mix the frozen bananas, Nutella, and coconut oil (optional) in the blender until in turns into a creamy and scoopable ice cream. The coconut oil is a great healthy fat that helps you body function well and be nourished. I always add a little, but that is up to you if you enjoy having it in there.
Cut your papaya in half and scoop out the seeds with a spoon. Fill the bowl with scoops of your freshly made ice cream and top with berries, chia seeds, bee pollen, shredded coconut, almonds, and anything else you would enjoy spicing your ice cream up with. Even a little melted dark chocolate would still make this an incredible, nutritious treat that is almost deceptively decadent in all its flavor and creaminess.
If you’d like to make it just that tiny bit more nutritious, even though this is already a massive win, try blending just a few kale leaves into the ice cream. Most high speed blenders pulverize the leaves so thoroughly that it is almost indictable and kale is a wonderful source of vital nutrients. You can always add more of the healthy Nutella if you want the flavor to be stronger and sweeter.
