Oatmeal Banana Pancakes with Chia Jam

Most of us already know that oatmeal is such an incredible miracle food for heart health, but did you know that you can blend your oats right in the blender to make a flour that can be used to make beautiful and delicious pancakes!?

This is a new and exciting one for me. I love the idea of adding freshly-made jam infused with all the health benefits of chia seeds too. So grateful to have found this new recipe – I hope you enjoy it too.

 Banana pancakes     

pancake ikon  1 cup oatmeal

pancake ikon  ½ cup of milk (Oat milk, soy milk, rice milk, almond milk etc.)

pancake ikon   1 TBL spoon of honey

pancake ikon   1 ripe banana

pancake ikon  1 pinch of cinnamon & salt

Put the oatmeal into the blender and blend it up until it turns into flour.

Put the banana, honey, and milk into the blender and blend until you get a smooth consistency. If the batter is too thick add some more milk.

 Chia jam 

  • 2 cups of strawberry (or a berry of your choice)
  • 3 tablespoons of chia seeds
  • 2 tablespoons of maple syrup
  • 1 teaspoon of maple syrup

Put the strawberries in a pot and let it simmer on medium-high heat until the strawberries soften, then mush them until you get the jammy texture you like.

Put the rest of the ingredients in the pot and give it a good stir. Then let it cool and store it in a cute mini mason jar in the fridge.
